    Observation: Observed that the continuous towel system used at the handwashing sink is not providing clean towels and/or is not operational. BROKEN.
    Correction: Repair the continuous towel system. Continuous towel systems shall supply the user with a clean towel to allow employees to properly dry their hands after handwashing.

    Observation: Observed the lack of an approved backflow prevention device on the water supply system. BACK OF STEAMER UNIT HAS A HOSE & NOZZEL, ABOVE A FLOOR DRAIN OPENING WITHOUT A BACK FLOW PREVENTER.
    Correction: A plumbing system shall be installed to preclude backflow of a solid, liquid, or gas contaminant into the water supply system at each point of use at the food establishment, including on a hose bib if a hose is attached or on a hose bib if a hose is not attached and backflow prevention is required by Law by installing an approved backflow prevention device as specified under 5-202.14.

    Observation: When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the wash cloth bucket with a concentration of 0.0 ppm total quaternary ammonium compound.
    Correction: The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR a concentration between 150-400ppm based on the manufacturer's use directions and using the appropriate test kit.

Today’s visit was to conduct a routine inspection.
Bev. Air 2 door cooler in front showed good morning log temperatures (38 today and even lower in past days), the food inside was at a good temperature, however the CFM took everything out of it to have it checked out. The display showed the same temp. as my thermometer (45F), and did not come down in time.
Calibrated thermometers this morning (32F/ice-bath). Also, per cfm, foodworkers inspect and separate damaged cans or other products for credit and these products are stored away from non-damaged products in the dry storage area.
