Critical: Reheating for Hot Holding* Observation: Observed chill and cheese being reheated in a warmer that will not get the temperature to 165° in the 2 hours.
Correction: Heat on grill to rapidly reheat.

Correction: These items must be date label when they are portioned or packages opened.

Correction: Remove since cardboard is not a cleanable surface.
