Ecolab will be called to replace dishmachine that is not sanitizing, until then, the 3 compartment sink must be used to clean food contact surfaces. Tuna records of the genus and species need to be obtained from the supplier to ensure that the tuna is an exempt species that contains no parasites. CFM will be recertified within the next month to make sure that there is a valid CFM on file.
