Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Cooling, Heating, and Holding Capacities Observation: The Large Make unit was not operating at proper temperature.
Correction: Fix the Large Make unit so that it can cold hold foods at proper temperature.
Temperature - Food Temperature Measuring Devices - Provided Observation: There was no food thermometer on the premises.
Correction: Provide a working food thermometer.

Not sure what sanitizing agent is being use on food contact surfaces (saw test kit for Peracetic Acid). Need to find out more about the use of Peracetic Acid whether it can be used on food contact surfaces and safe limits to use. Permit issued today. HM
Food Storage - Clean and Dry Location Observation: The separation distance between the hand sink and the ice bin was insufficient to prevent the ice from getting splashed on when hands are being washed.
Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.
Food - Frozen Food Observation: Frozen foods in the Fry Freezer located in the kitchen were not maintained frozen.
Correction: Ensure frozen food is maintained frozen.
Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: The Beverage Air cooler located in the Bistro Area was operating at marginal temperature. Found ambient air temperature of the unit @ 42 F while milk products were @ 44 F.
Correction: Lower the temperature of the unit so that it can cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
Handwashing Signage/Handwashing Facilities Observation: There was not a handwashing sign at the hand sink in the Bristo Area to remind foodhandlers to wash their hands.
Correction: Provide a sign or poster that notifies food employees to wash their hands at all hand sinks.
