    Correction: Cold hold phf/tcs foods at or below 41*. In most cases there was an issue of air flow blockage (see section 31).

    Correction: Discontinue blocking fan vents with boxes and using sheet pans that can reduce air flow and circulation. Discontinue storing phf/tcs foods in refrigerator 5 and turn the thermostat down on the milk refrigerator. Engineering began working on these units prior to my departure.

    Observation: The bottom refrigerator drawer has pooling water below the drawer insert.
    Correction: Alter or replace the waste collection compartment so all accumulated moisture due to conditions such as condensation, food or beverage drip, or melting ice completely drain.

It is not sufficient in number or capacity to meet the food storage demands of the establishment. Also, sheet pans were being used to support foods inside the unit possibly blocking air flow. Upper right two shelves holding at or below 37*. Bottom right shelves at 50*). Top left shelf at 34* and all shelves on left below above 45-50*. Refrigerator 5 also holding at 46* (sour cream inside at 47*).
    Correction: Person in charge removed sheet pans to monitor ambient air. Food contents stored along bottom shelves of unit were discarded or relocated. Tech to evaluate both units. Ensure refrigeration is holding at or below 41*.

arrived as staff was finishing up breaking down the breakfast buffet and had started putting food away / throwing foods out .
Facility anticipates remodel in late 2012 or early 2013 . This will include upgrades to dining room and remodel / addition of equipment in the kitchen . Plans for the upgrade are to be submitted to this office as well as the building department for review and comment

  • Cooling Methods (corrected on site)
    Observation: hash brown potato cubes placed into deep pan and covered and placed into under counter unit . Will not cool as required .
    Correction: potatoes are to be placed into 2 inch hotel pan and placed uncovered in the upright freezer to rapidly cool . Also recommend that sausage patties be placed into shallow pan ( rather than piled on dinner plate ) and placed uncovered in freezer to rapidly cool .
    Staff did place potatoes into freezer in a shallow pan and temperature had decreased to
    Foods are to cool from 135 to 70 in 2 hours and from 70 to 41 in the following 4 hours

Due to the age of the facility , it does not comply with current code requirements . In the event of a change of owner or remodel the facility must be brought up to current Code requirements . This will include the repair or replacement of all damaged / deterorated equipment , repair of deteriorated physical structures and improvement in lighting
In the event of a remodel plans are to be submitted unless it is a one for one replacement ( IE replacement of carpet for newer / replacement of booths and chairs. Placing new upright refrigeration unit in the same position as the one removed )

    Observation: personal beverage located on top of prep refrigeration unit with product being prepared ( omelet )
    Correction: personal beverages are to be in non breakable covered containers and located only on lowest level --never on or over an active food surface

    >> PHF contents of upright ref, 2 to be placed into freezer 1 to cool to < 41 in less than 2 hours . Preparation and cooking had occurred prior to my arrival . No eggs/ omelets requested during the course of the inspection . Breakfast buffet on offering for the day in he facility .Breakfast ends 10 am
