Food Storage - Clean and Dry Location Observation: Food stored on the floor or food stored less than 6" above the floor. Large number of boxes of dry waffle mix observed stacked on the floor in dry storage area due to an over order or mix.;Elevate food storage onto approved shelving with minimum 6" legs or casters. Instructed kitchen manager to obtain or relocate to a rack that is at least 6" off of the floor to deter pests and possible food contamination.
Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site) Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: Pink and black mildew was observed inside of the ice machine around the upper edge of door and plactic cover for ice maker.
Correction: Clean and sanitize these surfaces for food contact. Kitchen manager wiped area down with sanitizer towel and instructed to do so as often as necessary to eliminate future problems.
Hand Drying Provision (corrected on site) Observation: No disposable towels were provided at the hand washing lavatory in the the kitchen, when EHS pointed it out, a new roll was installed to correct the problem.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Continental breakfast served daily, M-F and Sat-Sun 6am-10am. Menu items consist of prepackaged food items only. No food prep whatsoever. Milk boxes maintained inside of small reach in during breakfast service at <41F. No internal thermometer provided, but recommended. Sanitizer and test kit provided. Employee health policy reviewed and in place. Recommend regular cold holding temp monitoring. Two employees are ServSafe certified. Please provide certificates so that Suffolk health cards may be issued. All information reviewed with PIC. No violation noted during this evaluation.
