The food items observed during the inspection were two separate containers of chili. Left information for food handler's class. Recommended for permit renewal. Permit issued.
  • Cooling Methods (corrected on site)
    Observation: The methods used for cooling were not adequate. Chili observed at 75°F after cooling for almost 5 hours, CFM placed on stove to reheat and will keep hot for remainder of day.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

    Observation: The nonfood contact surface of the back shelf on prep table is not corrosion resistant, nonabsorbent, and/or smooth. Needs to be resealed or repainted.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

    Observation: The nonfood contact surface of the area under the fryer had accumulations of grease and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Dead insect was found on the premises (in utensil drawer).
    Correction: Remove dead or trapped birds, insects, rodents, and other pests from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.

    Observation: The nonfood contact surface of the spout on coffee pot, areas under grill and other large pieces of cooking equipment, exterior of hood system, skillet shelf, high pressure spray nozzle and rinse sink had accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Light Bulbs Protective Shielding
    Observation: Light bulbs above refrigerators not shielded, coated, or otherwise shatter-resistent.
    Correction: Shield or replace light bulb with a coated or shatter-resistent bulb.
  • Mops - Drying Mops
    Observation: Mops and brooms not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
