    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QT-40 or QT-44 test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Non-Food Contact Surfaces and Utensils
    Observation: Interior of ice machine has pink slime.
    Correction: Clean and sanitize the surface of the ice machine.
  • Plumbing System Maintained in Good Repair
    Observation: Drain pipe from walk in cooler is leaking onto floor.
    Correction: Flow from cooler to be flowing into drain.

    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Coffee cup on prep table.
    Correction: Personal drinks to have lids and straws. Drink was discarded.

    Observation: Ranch dressing and corn dog nuggets not found on time control policy. Ranch dressing is kept on table during service and nuggets were found at122 F during service.
    Correction: PIC added these to the written policy in notebook.

The container used for teacher's ice is not self-draining. Provide a set up that allows for the water to drain away from the ice. Remove plastic pizza crust tubs from kitchen. They have not been picked up. Discussed setting up a time control policy for those foods that struggle to maintain proper temps on the line. If you place salads with TCS foods on them on the line for pick up then you should include this in your policy. Once foods are placed on time control they cannot be placed back into temperature control. Account for all of your individual portions of foods. Critical violations were corrected. Permit issued.

    Observation: Mashed potatoes being held in warmer cabinet at 128 F
    Correction: PIC returned to steamer to reheat to 165 F.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: Sliced turkey found with a date of 9/16. This should have been discarded by 9/22.
    Correction: PIC did not know when turkey was first prepped. PIC discarded turkey.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Ice scoop found cracked.
    Correction: Replace.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: Slicer found soiled with food debris.
    Correction: Clean and sanitize. PIC took cover off to clean.
  • Refuse - Covering Receptacles
    Observation: Dumpster or outside refuse container was open or uncovered.
    Correction: Cover all waste containers when not in continuous use.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floor drain under 3-c sink, by large kettle and by dishmachine found dirty. Vent above dishmachine and in laundry room are dusty.
    Correction: Clean thoroughly.
