1) Dedicated area in Walk in Cooler for Employee lunches.
2) Warewashing hot water sanitizing temperature at 160F+
3) Shell eggs used for baking purposes only.
4) 3 compartment sink and sanitizing buckets quat 145 concentration at 150-200ppm.
  • Physical Facilities in Good Repair
    Observation: Observed several overhead lights out in walk in cooler unit and overhead grill unit (CORRECTED DURING INSPECTION). Observed rusting shelving unit in warewashing area, this shelving unit is used exclusively for chemical storage only.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Ceiling vents in the laundry/mop sink room noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
