    Observation: PHFs' in the top of the prep unit cold holding at improper temperatures
    Correction: Relocate PHFs' to the bottom of the prep unit which is capable of maintaining food storage at 41°F or below. Must have this unit repaired and call me when it is done.

    Observation: The nonfood contact surfaces of the area around the grill, 3 bay sink, and fryers have accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents. Also you may not use news paper as a storage surface.
