| Pulaski Middle School sends food Mon-Thu. Most Fridays the students cook food under supervision of an instructor. Recommended that the Koch refrigerator with the out-of-temp milk be adjusted for cooler temps and that a temperature log be kept in order to track any inconsistencies.

| Pre-opening inspection: The following must be completed or in place before a permit can be issued: --The PIC must provide a copy of the C.O. from the building department. --An employee health policy must be in place. The Health Dept. provided employee health documents. --A designated Person In Charge (PIC) must be present at all times of operation. This PIC must be able to demonstrate knowledge of food safety principles. The PIC is currently signed up for the next ServeSafe 6 hour course (March 15th?). Please provide a copy of certificate to the Health Dept. The Health Dept. provided food safety documents on glove use, allergies, hot and cold holding logs, temperature safety.
