    Correction: The warewashing machine technician was contacted to repair the PSI gauge.
  • Warewash Machines, Temperature Measuring Devices
    Observation: The temperature measuring gauge for the warewashing machine's wash cycle is not reading a wash temperature >= 150 F. (indicated during the wash cycle a final temperature of 130 F).
    The temperature measuring gauge for the warewashing machine's final rinse is not reading a sanitizing temperature of >= 180 F. (indicated during the final rinse cycle 150 F).

    Correction: A temperature test strip was run through the warewashing machine in order to determine the true final rinse temperature. The test strip came back positive for the final rinse temperature reaching 180 F. The warewashing machine technician was contacted in order to repair the temperature gauges that will provide proper functioning temperature measuring devices at the (wash/rinse/sanitizing) compartment so employees can routinely monitor the water temperature.

  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (repeated violation)
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermostat read 176 and strip has not changed color. Repair tech called and 3 compartment sink will be used until unit is fixed.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
