Per PIC, cooling of chicken (for chicken salad) is no longer done at this location. Breading for chicken is sifted every 3 cycles and the pan is emptied, cleaned and sanitized every night. Per PIC, the soft serve machine is cleaned daily. Observed good glove use and hand washing. Recommend repairing coving at wall near 3 basin sink.
