| Per PIC, cooling of chicken (for chicken salad) is no longer done at this location. Breading for chicken is sifted every 3 cycles and the pan is emptied, cleaned and sanitized every night. Per PIC, the soft serve machine is cleaned daily. Observed good glove use and hand washing. Recommend repairing coving at wall near 3 basin sink. Chicken is received raw/ frozen and thawed under refrigeration. Flour for breading is sifted every 3 batches and changed every 4 hours. Chicken nuggets and filets maybe cooled for use in chicken salad. Observed good date marking, good hand washing and good glove use. Manager is ServSafe certified.
