The purpose of this visit is a risk factor assessment. Separate area for dented cans provided by CFM. Observed employee calibrate thermometers using ice bath method. Observed an employee assemble the sanitize basin of the three vat sink. Employee currently manually adjusts the sanitizer to 200ppm as the dispenser on the wall which dispenses sanitizer typically dispenses above the allowable 200ppm per manufacturer label. Thank you for actively managing employees and requiring the monitoring of the appropriate strength of the sanitizer. It is suggested that if a dispenser is used to dispense the sanitizer that the proper strength be dispensed through the dispenser at the proper strength, decreasing the number of times an employee must spend adjusting the mix to the proper strength. Thank you. No violation noted during this evaluation. | 10/16/2013 | Risk Factor | |
