Today’s inspection was to conduct a routine assessment. Thank you for accompanying me through the inspection as your participation allows me to clarify information and identify areas where your processes may need further attention or assessment.
*Please provide pictures of corrections for following by May 29, 2015 :
-soap at handsink by 3-vat
-papertowel at handsink in the front
*Please provide maintenance invoice for the door for the McCafe undercounter refrigerator by June 15, 2015.

  • Wiping Cloths/Use Limitation/Wet Towel Storage (corrected on site)
    Observation: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored in the bleach sanitizer bucket with 0ppm chlorine.
    Correction: Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses. Remade the sanitizer bucket at observed 100ppm.
  • Equipment / Good Repair / Components / Gaskets
    Observation: The door doesn't close tightly for 1dr ucr under McCafe.
    Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
  • Critical: Quaternary Ammonium Compound Sanitizer Solution Concentration per Use Directions (corrected on site)
    Observation: When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the 3-vat with a concentration of 0 ppm total quaternary ammonium compound. Employee was washing softserve machine but quat dispenser was empty of chemical.
    Correction: The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR a concentration between 150-400ppm based on the manufacturer's use directions and using the appropriate test kit. Employee obtained quat chemical from delivery and installed it. Observed quat at 350ppm.
  • Handwashing Cleanser, Available at Handwashing Facilities
    Observation: Observed that hand soap was not provided at each handwashing sink: handsink by 3-vat
    Correction: Provide hand soap at each hand sink to allow employees to properly wash their hands.
  • Hand Drying Provision / Individual, Disposable Towels
    Observation: Observed that paper towels were not provided at each handwashing sink: front handsink
    Correction: Provide paper towels at each hand sink to allow employees to properly dry their hands after handwashing.
  • Physical Facilities Good Repair
    Observation: Observed that the following is not in good repair: cracked tile/cove in the back.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.

The purpose of today’s visit was to conduct a routine inspection. Observed proper handwashing by several employees during inspection. Observed employee health policy in place. Sanitize basin observed with acceptable level of Quaternary ammonium and wiping cloth buckets observed with acceptable levels of Chlorine.
Important:
1. Repair the back handsink plumbing which is observed leaking into a trash can and fax a copy of the invoice within 10 days.     Observation: Plumbing connections under the back handsink are leaking and being collected into a trash can.
    Correction: A plumbing system shall be maintained in good repair. Repair the plumbing under the back handsink and fax a copy of the invoice for the repair to my attention. See "Important" section in the comment section of this report for details.

MAINTENANCE:
*Water Heater: AO Smith BT 80 230 which uses 75,000 BTU
*Dish Machine: N/A, Sanitize basin observed with acceptable level of Quat and wiping cloth buckets observed with acceptable levels of Chlorine.
  • Handwashing Sink / Used for Hand Wash Only (corrected on site)
    Observation: Observed the handsink at the back with debris in the basin. Observed a foodworker rinse a wiping cloth in the handsink in the front area of the kitchen.
    Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands.
