    Observation: Box 1 refrigeration unit is not keeping food at the proper temperature
    Correction: Repair the refrigeration unit to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.

  • Cooling, Heating, and Holding Capacities
    Observation: @EQUIPMENT@ was overstocked and is not sufficient in number or capacity to meet the food storage demands of the establishment.
    Correction: Provide additional cooling necessary to maintain food items at @TEMPERATURE@. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness. The processing at this facility involves multiple opportunity for items to pass into the danger zone without adequate documentation in place to verify items have not been stored in the danger zone (41-135) for more than 4 hrs. All TCS foods must stay either below 41 or above 135. Some temperature logs and a review of processing to ensure correct cooling and holding temperatures should be initiated.
