Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Monitor the Upright display cooler in the back to ensure that all TCS food are maintained at the proper temperature throughout the unit. Recommend that the items stored on the top of the prep unit wells be placed in an area of the prep unit that can maintain temperatures.
