Observation: In the white refrigerator that is located to the right of the upright freezer, there was a carton of shell eggs (unpasteurized) being stored above employee bag lunches, and being stored above cartons of pasteurized egg product.
Correction: Shell eggs (unpasteurized) (and raw meats) always need to be stored below, and well separated from, all precooked and ready-to-eat foods.and pasteurized foods. This violation was immediately corrected by the establishment management. We suggest, but do not require, that the establishment have only "pasteurized" shell eggs, and no "raw" shell eggs, at the site.
- Temperature Measuring Devices - Food (repeated violation)
Observation: The 0-220 F metal stemmed "cooks' thermometer," or, preferably, the digital equivalent, could not be located.
Correction: We require that a "cooks' thermometer-" preferably a digital thermometer, be present in the kitchen at all times-for monitoring internal temperatures of hot, and cold foods. Please purchase a "digital' thermometer and keep it at the site. Also, employees who may work with food need to know where the thermometer is located in the kitchen.

Observation: In the white refrigerator, to the right of the freezer, there was tomato ketchup being stored in a container (and lid) with commercial writing on it saying "vegetable spread."
Correction: This type of white bucket container is specified by the manufacturer, and by the food supplier, as being for a "single use only." Only the food which originally came in this container may be stored in this container. Switch to tupper ware, or some more durable type of container that can stand up to repeated dishwashing.

- Temperature Measuring Devices - Food
Observation: The foodservice worker could not locate the 0-220 F metal-stemmed thermometer, for monitoring food temperatures.
Correction: We require that there be a 0-220 F metal-stemmed thermometer (we suggest using the digital equivalent) on site at all times, for monitoring hot, and cold, food temperatures. The establishment is required to have an accurate thermometer on-site, for monitoring food temperatures, before the next operating day.
