    Observation: The sandwiches, wraps, and flatbreads made at another facility are not properly labeled as specified in law. (flatbreads are packaged on cardboard)
    Correction: Label packaged food as specified in law including 21 CFR 101 Food labeling, 9 CFR 317 Labeling, Marking Devices, Containers and as specified under 12 VAC 5-421-400 and 410.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Refrigeration unit and the knock box were observed in a state of disrepair and damaged.
    Correction: Repair the refrigerator and knock box to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace them with ones that meet the specifications of Part IV, Article 1 and 2 of this chapter.

There is no certified food manager (CFM) employed at this store. Advised Va Beach city ordinance requires that a CFM be present a minimum of 8 hours daily during operating hours. Operator will monitor temperatures of food in Beverage Aire low boy and take corrective action if needed. She said doors have been open. Advised safe food temperatures must be maintained at all times.

    Observation: According to the ""consume by"" date on the commercially processed ready-to-eat (RTE) cubanos in the refrigerator, the food should have been discarded 1 day ago.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

CFM is required to be present a minimum of 8 hours daily. Advised not to use glass display case for PHF until they can be held at or below 41 degrees F. Please call me when this has been corrected.
