    Observation: Observed shell eggs stored over ready to eat foods, milk and juice boxes, in the reach-in cooler. PIC removed the shell eggs from the RIC and placed in the employee RIC.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

6. Ensure if facility is going to use an oil fryer that a grease disposal method is approved by the health department
7. Ensure to notify the Health Department prior to installing new equipment

    Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Observe Raw chicken being stored above grapes and margarine in the Reach in cooler. Person in charge removed the chicken from the reach in cooler.
    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Chocolate milk and baked beans cold holding at improper temperatures. Observed internal temperature of 48'F for the milk and 50'F for the baked beans in the reach in cooler. Person in charge voluntarily discarded items.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The Reach in cooler was observed in a state of disrepair and damaged. The ambient air temperature of the Reach in cooler was observed at 52'F. Person in charge voluntarily discarded or relocated contents of fridge to another reach in cooler.
    Correction: Repair the reach in cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the reach in cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
