Observed Certified Food manager with only a Limited Northern Virginia Food Manager license for an establishment with a full service food license. A follow up inspection will be conducted in 10 (ten) days to ensure that a Fully Licensed Northern Virginia Food Manager employee is on duty. Inspection will be on or after January 22, 2014.

Observation: Some food container lids and spatulas were observed with cracks, chips, pits and similar imperfections. Instructed to discard/replace worn or damaged utensils.

- Equipment/Nonfood-Contact Surfaces/Cleaning Frequency
Observation: The gaskets on some of the refrigeration units were observed with an accumulation of soil residues.
Correction: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. The presence of food debris or dirt on nonfood contact surfaces may provide a suitable environment for the growth of microorganisms which employees may inadvertently transfer to food. If these areas are not kept clean, they may also provide harborage for insects, rodents, and other pests.
