Notes: Be sure to disassemble slicer and clean all parts thoroughly. Thermometer probes are food contact surfaces and need to be washed rinsed and sanitized. Change gloves and wash hands after touching any raw meat product, even a frozen raw meat product. All dented cans that are to be returned to vendor should be separated from other products in dry storage. Hanging thermometers should be located in the warmest part of the refrigeration units, usually near the door. Be sure all containers are labeled with at least the common name of the food item being stored. Replace cutting boards that are excessively scored. All interior surfaces of cold storage units must be smooth and easily cleanable
Linens and Napkins - Use Limitation Observation: Napkins in contact with food. Observed towel covering lettuce in WIC.
Correction: Cease use of napkins or paper towels with food unless they are used to line a container for the service of foods. Linens and napkins must be replaced each time the container is refilled for a new customer.
Food Storage - Clean and Dry Location Observation: Food stored in a location where it is subject to splash, dust or other contamination. Observed peeling paint on walls and ceilings in WIC.
