Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Discard affected foods and monitor unit.

Observation: The door gasket to the Toddler room RIC is in poor repair.
Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.

Observation: The temperature of the in-use wash water solution was observed at less than 110°F.
Correction: Maintain a temperature of 110°F and above or the temperature specified by the manufacturer for optimal performance of the detergent to clean equipment and utensil surfaces. (Maintanence was called repaired before inspection was concluded)

Food served/prepared 10 am until 12 noon for day shift. 75 pupils enrolled, 6 day per week operation. Pupils in center 6 am until 10 PM. No raw foods prepared. Precooked foods delivered in frozen state then thawed and re-heated for service. Dishes cleaned/washed at end of evening shift then sanitized in Dishmachine. Samantha Kennedy Director PIC. Dishmachine stationary rack . Wash 164 degrees, rinse 165 pressure 20 psi, test tape 160 degrees. Unit had been off since previous evening. Recommend Dishmachine be serviced to check/adjust gauges. Observation: Observed eggs for apple pie were not pasteurized.
Correction: Recommend eggs should be pasteurized when served to highly susceptible population in a child care center. Eggs discarded, will be replaced with pasteurized.
