Monitor RIC in infant room and Toddler room with equipment logs and submit weekly to HHD. Take food temps to monitor. Food supplier is US foods. Discussed Employee Health. Form 1B observed. OEHS booklet given as well as CDC Handout packet.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: PHF cold holding at improper temperatures in RIC in Toddler room.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Discard affected foods and monitor unit.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket to the Toddler room RIC is in poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Warewashing - Manual Warewashing Equipment, Wash Solution Temperature (corrected on site)
    Observation: The temperature of the in-use wash water solution was observed at less than 110°F.
    Correction: Maintain a temperature of 110°F and above or the temperature specified by the manufacturer for optimal performance of the detergent to clean equipment and utensil surfaces. (Maintanence was called repaired before inspection was concluded)

Food served/prepared 10 am until 12 noon for day shift. 75 pupils enrolled, 6 day per week operation. Pupils in center 6 am until 10 PM. No raw foods prepared. Precooked foods delivered in frozen state then thawed and re-heated for service. Dishes cleaned/washed at end of evening shift then sanitized in Dishmachine. Samantha Kennedy Director PIC. Dishmachine stationary rack . Wash 164 degrees, rinse 165 pressure 20 psi, test tape 160 degrees. Unit had been off since previous evening. Recommend Dishmachine be serviced to check/adjust gauges. Observed food being served in kitchenettes for today's lunch menu of cold sandwiches. Kitchen (main) used for storage. Observed glove usage. Pre-school/after school enrollment 75 pupils. 6:00AM to 8:00 PM hours of operation. U. S. Foods purveyor.
  • Critical: Food - Pasteurized Foods - Prohibited Reservice and Prohibited Food*
    Observation: Observed eggs for apple pie were not pasteurized.
    Correction: Recommend eggs should be pasteurized when served to highly susceptible population in a child care center. Eggs discarded, will be replaced with pasteurized.

    Observation: Observed cooling of foods above 41 degrees, cheese sandwiches and soup since 12:30 PM today.
    Correction: Recommend soup and sandwiches be discarded or cooled to less than 41 degrees by 5:00 PM today or discard. PIC discarded. CORRECTED.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Observed cold holding foods above 41 degrees, yogurt and milk, holding since delivery around 9:00 am today.
    Correction: Recommend adjusting temperature in cooling unit to maintain foods at 41 degrees or below. PIC adjusted thermostat. CORRECTED.
