The purpose of today's visit was to conduct a routine inspection. Observed facility clean and organized during a busy cooking and preparation period. EHS observed the following good active managerial control practices in place: date marking, cooling methods and cooler set to below 41F in advance of busy period. - Critical: Date Marking of Refrigerated, Ready-to-Eat PHF (TCS Food) (corrected on site)
Observation: The following refrigerated, ready-to-eat, potentially hazardous food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked: whole milk, half & half, and heavy cream.
Correction: Refrigerated, ready-to-eat, potentially hazardous commercially processed foods when opened and kept for more than 24 hours cannot have a shelf-life of more than 7 days, including the day of the original container was opened. These food items must be marked with either the "consume-by" date and/or "preparation" date, color-coded labels, or another marking system/method that effectively indicates shelf-life that is clearly understood and properly used by the employees. This date cannot exceed any manufacturer determined "use-by" date based on food safety.
- Sanitizer Test Kit Required
Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions at the 3-compartment sink.
Correction: Obtain a QUATERNARY AMMONIA COMPOUND (QAC) test kit to check the concentration of the sanitizer at the 3-compartment sink.
- Warewash Equipment, Cleaning Agents / Required (corrected on site)
Observation: Detergent/Rinse agent was noted to be less than an inch in the container and a replacement was not available on premises for use at the ware washing machine.
Correction: When used for ware washing the wash compartment of a sink, mechanical ware washer, or wash receptacle of alternative manual ware washing equipment shall contain a wash solution of soap, detergent, acid cleaner, alkaline cleaner, degreaser, abrasive cleaner or other cleaning agent according to the cleaning agent manufacturer's label instructions. ( A new container of Rinse agent was brought in from the parent establishment during the inspection).

Observation: The front door was observed kept open for ventilation and opening is not protected by a screen or other effective means.
Correction: Provide screens (16 mesh to 1 inch), air curtains, or other effective means to protect against the entry of insects and rodents. (door closed)
- Lighting Intensity / Consumer Self-Service, Reach-Ins, Other / 20 foot candles
Observation: Observed that inadequate lighting was provided above the 2-door upright refrigerator. The bulbs in the light fixture located on the ceiling above the refrigerator are burned out.
Correction: Increase the lighting to provide a minimum of 20 foot candles in these areas. Replace the burned out bulbs or repair the fixture if the fixture is broken.
