This follow-up inspection is being conducted to address improper cold holding temperatures of foods in the make table. The unit was still cold holding foods at improper temperatures of 44-50*F. Time control for food safety is being implemented for the sliced tomatoes, shredded cheese, sliced cheese and liquid egg in container in this unit. See note to file for more details.
The make table cutting board is heavily scored and soiled and is unable to be effectively sanitized due to its condition. The cutting board needs to be resurfaced or replaced.

    Observation: A temperature measuring device was provide but the Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

all hot product on the serving line had time used as the control . All product was within required time . Bojangles has stricter time frames than VDH , Majority of product was hotter than VDH requirement of 135 for hot holding . See product temperatures .Fried chicken pieces with time indicated 3 -6 pm had temperatures of 128-143

    Observation: >>upright freezer door handle grip cracked / split
    >>both biscuit under counter refrigeration unit door gaskets are split

    UHT creamers can be used and do not need to be maintained refrigerated

    Correction: Facility does not have thermocouple or rapid read digital thermometer and admittedly told me that they do not take internal temperatures of the chicken routinely ( every now and then ) .
    Staff should be taking temperatures of multiple large pieces of each bath of chicken cooked .
    Provide location with thermocouple or rapid read .digital thermometer to take internal termperatures of cooked product .
    CHicken must be at least 165 degrees .
    Chicken batch ( entire ) was returned to the fryer and cooked for another 2 minutes . Multiple Chicken pieces out of fryer > 180
