    Observation: Noted a) some pans wet stacked b) One clean pan with rice in it. c) Ice scoop dirty on the edges. Removed
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Noted a) Some shelves with clean pans stored on them are dirty/ food particles on them b) Magnet holding knifes is dirty (e.g. old flour). c) Some lids with food product in it has flour on it and wet. d) Cutting board on sandwich unit stained and scored needs to be resurfaced and cleaned. Non food contact surface.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

  • Critical: Plumbing System Maintained in Good Repair
    Observation: Noted drain at air gap not centered to drain properly and water/sewage falling on the floor when 3 compartment sink is drained, unless the drainage is controlled to be slow. Repair so all the drain water/sewage drains into the drain and none splatters on the floor.
    Correction: Plumbing systems and components shall be maintained in good repair.

Complaint of tea containers being nasty and only being rinsed out. Went on site, Manger showed one metal & one plastic container holding tea. a ) metal container which was clean when tea was drained out. Out 1 out of 4. b) Plastic white container was tea stained with scratches in the plastic. No film seen . Other containers not checked . Manager to replace the plastic containers of 4. Manager says all containers washed rinsed and sanitized on a daily basis. Plastic containers to be bleached once a week as per manager. Manager to reiterate cleaning practices with staff. .
No violation noted during this evaluation.

comments: 1) make sure employees health is in place left literature with manager. 2) Check the drain in the veg sink overflowing many need to bring plumbing closer to drain sink.

    Observation: Noted employee washing hands and then touched face with washed hands & then went to bag/ prepare food.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Noted ice machine leaking repair. .
    Correction: Repair the Ice machine to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the Ice machine, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: Noted 3 lids with food particles on it, Stored on shelf . Scrub more.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Noted handwash station blocked by trash can and with ice in the handwash basin. Trash can was moved.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the trash can preventing its use.

Talked to manager of complaint I need to talk to the manager on duty during the complaint so call me . Noted no time control written down as per bojangles procedures on hot holding on the front line. Corrected on site time was written down for discarding the food. Call health dept at 458-1297 if any more customers complin of foodborne illness till July 10th.

    Observation: Noted tea container/dispenser stored next to & under soap dispenser. May become contaminated when washing hands. removed.
    Correction: Discontinue storage of clean equipment and utensils in a location subject to contamination.

    Observation: Noted drink cup & sanitizer continer in 2 hand sinks. Cannot wash hands in those sinks till removed. Noted a 3rd handsink blocked with a sintizer container. removed. .

    Observation: Noted chicken on the line oat 121 F noted susage in bach at 117 these items were to be under time control and temp contorl but was under neither. Holding time is 2 hours and then discarded. Maintain time control

    Observation: Noted 2 spatulas dirty and one lid with grease on it on shelf. Removed to be cleaned.
    Correction: Clean and sanitize these surfaces for food contact.
  • Handwashing Cleanser - Availability
    Observation: No soap at handwash station in the back. One of 3 handwsh stations.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
