Risk Factor
Reviewed reheating temperatures. Discussed turning on upright refrigerator prior to event. Observed handwashing and mobile permit posted.
Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site) Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination. Observed raw chicken stored over raw beef.
Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.
Cloths - Wiping Cloths - Use Limitation Observation: Wiping cloths improperly stored between use. Wiping cloths not observed not being stored in sanitizer solution.
Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

Routine
Generally, facility observed to be clean and well ordered. Stafff knowledgeable about employee health policy, glove use,handwashing prevention of cross contamination of raw meats vs. ready to eat foods and procedures observed being followed by staff. Good food temperatures observed throughout the flow of food.
Cooling Methods Observation: The methods used for cooling did not appear to be adequate. Observed deep stack of pre-cooked/cooled and sliced roast beef at slightly elevated temperature. Operator is not monitoring the food temperatures during the cooling process.
Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
Temperature - Food Temperature Measuring Devices - Provided Observation: The person in charge could not provide a food temperature measuring device. It is very important that food temperatures be monitored regularly throughout the flow of food during cooling, after cooking, hot holding and throughout the cooling process.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
Equipment - Good Repair and Proper Adjustment Observation: Operator is lining wire shelving in refrigeration units with aluminum foil which is blocking the airflow.
Correction: Ensure foil is removed to ensure refrigeration can maintain optimal temperatures and allow for enhanced airflow..
