Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
Cooling, Heating, and Holding Capacities Observation: Front line sandwich refrigeration unit cold olding at 46 degrees Fahrenheit.
Correction: Repair or replace refrigeration unit so that potentially hazardous foods are cold held at 41 degrees Fahrenheit or lower. PIC to contact VDH when refrigeration unit is repaired/replaced and operating properly. Time shall be used as a public health control until unit is operating properly. Supporting documentation shall exist when time is used as a public health control. Improper food storage temperatures are a major contributing factor to foodborne illness.
