Observation: The Person in Charge could not produce an appropriate food thermometer to measure and verify the internal temperatures of foods.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature of foods.

Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: The cold water faucet on the hand sink in food processing area is not working and in poor repair.

Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties.

Observation: Hot / Cold water under insufficient or inadequate pressure was found to serve the following equipment: Cold water faucet on hand sink behind counter.
Correction: Inadequate water pressure could result in improper hand wash or equipment operation. Restore water under sufficient and adequate pressure to the hand sink immediately.

Observation: The hood over the fryer and back splash noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Observation: Employees observed working in the food service area without proper hair restraints.
Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

Observation: Clean equipment/utensils were found stored in the back storage area under a significant leak in the ceiling.
Correction: Discontinue storage of clean equipment and utensils in a location subject to contamination.

Observation: The back room used to store discarded items is full and now soaked due to the significant leak in the ceiling causing an attractant to pests.
Correction: Discontinue the practice of leaving refuse stored in the back room.
