Manager and employees knowledgeable on food safety risk factors and employee health. All foods date marked as required. Monitoring and recording temperatures periodically throughout the day on all refrigerated units. Walk-in refrigeration units and storage areas well organized. Dish washer knowledgeable on proper operation of equipment. Manager and employees should be commended for their efforts in assuring foods are prepared in a safe manner at all times.

Employees observed washing hands and wearing and changing gloves during inspection. Ice baths being used to cool hot foods within proper time parameters. Separate areas designated for storing and preparing raw and ready-to-eat foods. All foods date marked as required. Staff should be commended for their dedication to assuring foods are prepared and handled in a safe manner at all times. Director and most staff are Serv-Safe accredited thru national food safety certification program.

NO VIOLATIONS OBSERVED. Kitchen Manager (Linda) and Chef (Mark) have done an excellent job of training employees handling foods. Food staff are Serv-Safe certified and all knowledgeable on food safety risk factors and employee health. All employees observed washing hands and wearing and changing gloves when changing tasks throughout inspection. All foods date marked as required. Frozen raw chicken breast being thawed under cold running water. Dishwasher (Barry) knowledgeable on operation of dish machine.

It is highly recommended that the refrigerator that will not hold proper temperatures next to the steamer is either replaced, repaired or removed. It presents a convenient place for food service workers to put food that will not be held at proper temperatures.

    Observation: The traulson refrigerator next to the steamer is not sufficient in capacity to meet the food storage demands of the establishment.
    Correction: Provide additional refrigeration equipment as necessary to maintain food items at 41°F or less. Improper food storage temperatures are a major contributing factor to foodborne illness.
