Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
Equipment - Cutting Surfaces Observation: The cutting board(s) heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.

Hand sink has been installed near 3 compartment sink. Sinks have been sealed to wall. Exposed wood has been painted. Health department permit was issued. No violation noted during this evaluation.

Need to paint or seal exposed wood at base of handsink and in food preparation area. Need to seal handsink to wall. Need to clean/sanitize slicer and other food contact equipment before use. Need trash can at handsink. Ceiling tiles in food prep area are vinyl faced and approved. Advised operator that ceiling tiles are not cleanable over 3 compartment sink. If they are not kept clean or if they are ever replaced, need to replace with smooth easily cleanable tiles. I provided employee health forms to be signed by each employee. There is no handsink in dish wash room. DID NOT ISSUE PERMIT for this reason. Advised cannot serve prepared food until permit is issued by health dept. I provided employee health forms to be signed by each employee. No violation noted during this evaluation.
