This school prepares and offers a wide variety of hot and cold foods for approximately 600 - 800 young adults per day. Kitchen Manager, Asst. Manager and staff knowledgeable on food safety risk factors and employee health. Staff observed washing fruits and vegetables prior to preparing. All foods date marked as required. ALL STAFF observed washing hands and wearing and changing gloves several times during inspection (handling foods and changing tasks). Temperatures being monitored on foods being cooked and all refrigeration and hot holding units throughout the cafeteria. All employees observed washing their hands and wearing and changing gloves throughout inspection. All personnel are offered food safety training prior to handling foods. All foods date marked as required. This cafeteria has 4 food lines, serves multiple foods and all foods being prepared and held at proper temperatures. Food storage areas for hot and cold foods were clean and organized. Temperature monitoring logs kept on all refrigerated and hot food holding units and dishwasher.Firm was preparing foods during inspection. Managers are Serv-Safe certified (Frances/Janet) and knowledgeable on food safety risk factors and employee health. Employees ( Joan, Mary, Lydia, Renee, Gloria, Vickie, Gloria and Chris) could all answer questions relating to food safety temperatures and proper food handling procedures. Using ice baths to cool foods when necessary. Crystal was knowledgeable on the operation of the dish wash machine and proper cleaning of equipment. All employees observed washing their hands and wearing and changing gloves throughout inspection. All foods date marked as required. This cafeteria has 4 food lines, serves multiple foods and all foods being prepared and held at proper temperatures. Food storage areas for hot and cold foods were clean and organized. Cafeteria staff members were dedicated to assuring foods prepared and handled in a safe manner at all times. Temperature monitoring logs kept on all foods. Firm was serving meals during inspection.
