There does not appear to be enough refrigeration in the facility for the amount and types of food being prepared. Recommend adding more refrigeration. Discussed cooling methods. Discussed the need to monitor the refrigeration units as well as the food. Discussed thawing vacuum packaged salmon.
  • Critical: Demonstration of Knowledge*
    Observation: The person in charge failed to explain the relationship between food safety and providing equipment that is: (a) Sufficient in number and capacity, and (b) Properly designed, constructed, located, installed, operated, and cleaned.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands (sliced bread and sliced red peppers).
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Critical: Cooling* (corrected on site)
    Observation: Salmon chowder and roasted red pepper soup noted not being adequately cooled to prevent the growth of harmful bacteria. Placed in ice bath to rapidly cool.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
  • Cooling Methods
    Observation: The methods used for cooling were not adequate.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Most foods in the Hozhizaki 1 DR reach-in cooler were cold holding at improper temperatures. Voluntarily discarded.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Temperature Measuring Devices
    Observation: There were no temperature measuring device located in any of the refrigeration units except the pastry case.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Cooling, Heating, and Holding Capacities
    Observation: The one door Hoshizaki reach-in cooler was overstocked and is not sufficient in number or capacity to meet the food storage demands of the establishment.
    Correction: Provide additional refrigeration units necessary to maintain food items at 41 degrees or below. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
    Observation: The handwash station is being used for purposes other than washing hands (observed putting a used spatula in sink).
    Correction: The handwash facility identified above is to be used for washing hands only
