The small Haier RIC has been adjusted and is now maintaining the correct temperature. The glass door RIC is now no longer being used to cold hold creamers or dairy products No violation noted during this evaluation.

Follow-up
Discussed with the PIC the need to replace the small refrigeration units which are not operating properly. Also discussed the need to move equipment and thoroughly clean the flooring and shelving in the entire establishment.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation) Observation: Half & Half and other milk products were cold holding at improper temperatures.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
Non-Food Contact Surfaces Observation: The nonfood contact surface of the deep freezer lid and the seals on the Haier Glass Door RIC has accumulations of sugary syrup and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
Handwashing - Using a Handwashing Lavatory - No Other Purpose Observation: The only handwash station at the establishment is being used as a dump station.
Correction: The handwash facility identified above is to be used for washing hands only.
Physical Facilities - Cleaning Frequency and Restrictions Observation: Flooring and shelving in the establishment are in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Routine
The PIC has indicated that next operating season he wishes to include coffee and hot chocolate on his menu. The establishment can handle those additions and I told him to just be sure to indicate the menu change on next year's application. We also discussed the proper way to handle blocks of ice while loading the ice shaving machine.
