A professionally-operated fast food facility. Management is very knowledgeable and responsive, running a well-controlled facility that is clean, organized, brightly lit, well-stocked, and properly monitored. Active managerial control is evident. Employees respond promptly to management guidance, and are properly trained. Coolers and dry storage areas are neatly maintained, with boxes closed after access, and food contact paper goods protected and neatly stored. Established sanitation procedures are enforced, and restaurant is free of background soil that often plagues fast-paced kitchens. Temperature control throughout the facility is in compliance, and operator checks internal food temps in every hot and cold holding unit 3x day.
No deficiencies noted at inspection.

* Facility is clean and well-maintained.
* Daily temperature logs are kept for each manager shift and a delivery log is kept to check temperatures on delivered items.
* Facility uses time as a control for sliced tomatoes and sliced cheese. Any leftover items are discarded after the marked 4 hours.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Observed a build-up of food debris and grease on the floor underneath the fryers. PIC will have cleaned.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
