The purpose of today's visit was to conduct a routine inspection. EHS provided CFM with and discussed the following handouts: CFM guidelines and updated Employee Health handouts (as future reference). EHS observed several active managerial control systems in place: several food thermometers, food safety and sanitization educational information posted throughout the facility, datemarking and extra unit thermometers inside coolers that have a built-in integral thermometer.

  • Equipment / Good Repair / Operation
    Observation: The white upright freezer no longer works and is being used as intended for cold holding.
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. If this unit can no longer be repaired remove from the premises.
  • Equipment / Good Repair / Components / Gaskets
    Observation: The door gasket of the one-door reach-in refrigerator at the serving area is broken/torn.
    Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Repair or replace the broken rubber gasket to prevent ambient air temperature from rising inside the unit which may lead to improper cold holding of potentially hazardous foods.
  • Single-Service & Single-Use, Displayed & Dispensed / Prevent Contamination (corrected on site)
    Observation: Plastic fork, spoons, and knives were found displayed or dispensed with the food or lip-contact surface facing customers.
    Correction: Single-service items and cleaned/sanitized utensils shall be handled, displayed, and dispensed so that contamination of food and lip contact surfaces are prevented. Display these utensils so that the handles are facing customers, preventing contamination of the food/lip contact surfaces.
  • Lighting Intensity/ Food Prep Area / 50 foot candles
    Observation: Observed that inadequate lighting was provided in the food preparation area, under the oven hood. One of two light bulbs has burned out.
    Correction: Increase the lighting to provide a minimum of 50 foot candles in all food preparation areas. Replace the burned out light bulb to provide adequate lighting.

  • Duties / Train Employees in Food Safety (corrected on site)
    Observation: Employees are not properly trained in food safety as it relates to their assigned duties.
    Correction: The Person in Charge or certified food manager shall train all his/her employees in food safety as it relates to their assigned duties. Train food employee on how to properly check the concentration of the quaternary ammonium compound sanitizer at the 3-compartment sink.
  • Nonfood-Contact Surfaces Clean at Frequency to Preclude Accumulation
    Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: Hot water heater. The top of the hot water heater was noted to very dusty.
    Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
  • Physical Facilities Good Repair
    Observation: Observed that the wall near the chest freezer in the back room is not maintained in good repair.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
