The purpose of today's visit is to conduct a complaint investigation received to the Fairfax County Health Department on 03/11/15. The complainant visited the facility on 02/19/2015 after 5:00 PM and allegedly notice there food being prepared in unsanitary way and observe the plates with mold on it and concern with the lack of sanitation. Talk to the CFM about the complaint. Observe the facility overall to be clean and food empoloyees preparing the food properly during the routine inspection. However, observe some plates not properly being clean with food debris and the CFM remove the plates back to the dishwashing area to be rewashed. Advise the CFM to make sure the food caught in the dish machine is being empty periodically and the servers and dishwasher are scraping the plates before entering into the dish machine. The purpose of today's visit is to conduct a complaint investigation received to the Fairfax County Health Department on 03/11/15. The complainant visited the facility on 02/25/2015 around 3:30 PM was concern about the sanitary conditions such as dirty dishes, cross contamination, soiled glassware, silverware, the rest-room and become ill after. Talk to the CFM about the complaint. Observe the facility overall to be clean during the routine inspection. However, observe some plates not properly being clean with food debris and the CFM remove the plates back to the dishwashing area to be rewashed. This was first risk factor assessment inspection after a pre-opening inspection. Many food safety practices and risk factor interventions are in place. A datemarking program is in place with very extensive labeling. There were some items which were beyond the dates indicated on the labels. The follow-up on the datemarking needs some improvement. The consumer advisory is incomplete on the menu. The disclosure statement is used as the consumer advisory on the pages for which it is applicable. The reminder statement must be added to the disclosure statements. The changes must be made by the time of the next inspection in approximately six months.
