7/13/15 visit notes: T+S Mechanical came to service the unit in the morning. Freon was added and technician said there was a leak in the unit, but he didn't know where. The data logger was reprogrammed to run from 2 pm on 7/13 to 2pm on 7/14 to see if the freon charge made a difference to the ambient temperature of the RIC. No TCS food items are to be kept in the unit until cleared by the inspector. TCS items noted above were discarded when found above 41 F. 7/14/15: Downloaded the latest data logger information. The coldest temperature the unit reached was 45.3 F and the highest temperature was 48.4 F. The manager stated a new 2-door True RIC has been ordered to replace the one in question, and is scheduled to arrive on 7/16 or 7/17. Until that time, all TCS items are to be stored in the small True RIC. Another follow-up visit will be made once the new unit has been received.

Notes: 1. The Victory RIC is not maintaining proper temperatures today. A data logger has been programmed and will run over the weekend to monitor the functionality of the equipment. All non-TCS items should be removed from the unit immediately, and remaining TCS (temperature control for safety) product should be spread out on the shelves to allow air flow between the top and bottom of the unit. The manager is not aware of a thermostat that can be adjusted, and did call in asking for a repair technician to come out. 2. Product that has been pulled from service is saved for a food donation program. Warm pretzels are being placed in the refrigeration unit, which is hurting the refrigerator's ability to maintain cold temperatures. Suggest cooling all product prior to placing it in the RIC. Could consider filling a container with ice and laying the bagged product on top of the ice for a short time to help pull out the heat from the product as quickly as possible. Once cooled, place donated product under refrigeration. 3. Make sure employees hang the green hose at the mop sink outside of the of the sink when not in use. The hose cannot be left extending down beyond the flood rim of the sink due to risk of backflow/backsiphonage. 4. Manager showed documentation to the inspector that the sweet cream unsalted clarified butter is not TCS, even though it is refrigerated upon delivery.
