The objective of cleaning focuses on the need to remove organic matter from food-contact surfaces so that sanitization can occur and to remove soil from nonfood contact surfaces so that pathogenic microorganisms will not be allowed to accumulate and insects and rodents will not be attracted.

    Observation: Interior and exterior of the cook-line ovens were observed in need of cleaning.
    Correction: The cavities and door seals of ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure. Today's inspection was a follow-up for improper cold holding and date marking. Foods are prepared daily and manager states if foods are held longer than 24 hours, they will be date marked. No cold holding issues noted today, however improper cooling methods observed for lettuce and tomatoes. Items were placed in walk-in to cool properly. Substantial compliance observed.

Observed vegetables stored near /under 3 compartment sink. Please do not use 3 door salad prep unit or 2 dr prep unit (True) for potentially hazardous foods. Please service before use to ensure food will be maintained at 41 F. The following are in need of cleaning: microwave, equipment, shelving, floors, floor/wall junctures. The hand washing sink needs to be accessible please remove trash and relocate soda syrup. Due to no certified food manager, and other repeat priority violations, a follow-up inspection will be conducted in 10 (ten) days.
