Food Handlers Cards and Certified Food Manager's Certification need to be obtained and posted. Health Department follow up on Jan. 22, 2015, before permit is issued. No violations in the kitchen. Discussed food class schedules. Observed good managerial control in the kitchen. Clean and well organized.

    Correction: A food service employee shall have a valid food service card prior to working in the food service establishment. The person in charge shall not employ anyone to work in the food service establishment until they posses a valid food service card. A food service employee shall have a valid food service card while working in a food establishment. Information was given on site.

All employees have food handler cards. The owner/operators are Certified Food Mangers. Employee health, hand washing and no bare hand contact with ready to eat foods was reviewed. Thank you.

    Observation: Ham cold holding at improper temperatures.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Date Marking - Ready-to-Eat; Potentially Hazardous Food; Date Marking*
    Observation: The ready-to-eat (RTE) foods in the refrigeration units are not properly dated for disposition.
    Correction: Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

. The facility looks good. Employees have food handler cards and they understand no bare hand with ready to eat food, proper hand washing, and employee health. Note: Owner was asked to decrease the temp in the prep reach in unit in order to maintain food temps at 41 degrees or below
