- Food Contact Surfaces - Cleanability*
Observation: Food storage containers and utensils were found to contain cracks, chips, or pits that can not be easily cleaned. Prep knife handle was heat damaged and pitted and not easily cleanable.
Correction: Discard cracked or chipped food storage containers and utensils to provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent build-up of food debris.
- Cooling, Heating, and Holding Capacities
Observation: Sandwich unit was found cold holding at 53 degrees F.
Correction: Repair the unit so that it cold holds at 41 degrees F. or less. Improper food storage temperatures are a major contributing factor to foodborne illness.
- Equipment - Good Repair and Proper Adjustment
Observation: The Sandwich unit was observed in a state of disrepair and damaged. Doors do not close on the unit properly.
Correction: Repair the sandwich unit to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.
- Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: under moicrowave units directly over prep table.
Correction: Maintain nonfood-contact surfaces of equipment clean to the sight and touch.
