The purpose of this visit was to conduct a routine inspection. Per discussion with the manager, the food items are prepared from no raw animal products. Leftover food items are not served to the children. Employee Health Policy is in place. The food contact surfaces are sanitized with chlorine.
Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Go Gurt (46F), Milk box (43F), Sliced Turkey (4 Packages - 43F), American Cheese (43F)
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. FOOD ITEMS WERE SEPERATED FROM THE REGULAR STORAGE TO TAKE IT HOME. THE MANAGER WILL DISTRIBUTE TO THE STAFF AND MAKE SURE TO NOT TO SERVE TO THE CHILDREN.
Equipment / Good Repair / Operation Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Superior 2-DR flat top (initial/Final) - (46/46)
Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. THE MANAGER RE-ADJUSTED THE THERMO STAT, BUT THE TEMPERATURE REMAINED SAME. REPAIR THE UNIT AND PROVIDE A COPY OF SERVICE RECEIPT TO THE HEALTH DEPARTMENT WITH IN 14 DAYS. DO NOT STORE ANY TIME/TEMPERATURE CONTROL FOR SAFETY (TCS) FOODS IN THE UNIT UNTIL UNIT IS REPAIRED.

The purpose of this visit was to conduct a risk factor assessment. Chlorine sanitizer concentration in the 3 vat sink: 50 ppm. Good retail practice discussed during the inspection: 1) food employees shall wear hair restraints such as hats, hair coverings or nets that are designed and worn to effectively contain their hair. No violation noted during this evaluation.
