This visit was made to conduct a routine food safety evaluation. There are renovations occurring in the kitchen that are being facilitated by the Third Baptist Church. The manager, Mery Bustinza, agreed to submit plans, equipment list, and plan review fee as soon as possible. Site plans will have to be obtained from the church. I will email the form and checklist to her today or by tomorrow at the latest. Construction can not occur during hours of operation to prevent contamination of foods. All work must be done after American Day School hours of operation for the kitchen. No change in process or menu. This visit was made to conduct a routine food safety evaluation. Since you serve a highly susceptible population (infants and young children), raw eggs may only be used when combined for immediate service to one customer as in an omelet, scrambled eggs, or souffle, or when baked completely in baked goods. The FDA Food code prohibits you from combining them for a large batch of scrambled eggs as this increases the hazard for Salmonella exposure. Use pasteurized eggs for this purpose. The person in charge was very helpful and knowledgeable.
