Continue to monitor temperatures to be sure it reaches proper temperature and repair if needed. Need to maintain at the restaurant current proof for certified food managers.

Certified food manager was not here at time of inspection. There is no proof of certified food manager available for review. Reminded that Va Beach city ordinance requires that CFM's must be recertified every 3 years.

    Observation: Potatoes cold holding at improper temperatures. Operator discarded.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: The ready-to-eat (RTE) sliced meats in the refrigeration unit not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

There is no current proof for certified food managers available for review. Advised this must be maintained on premises for health department review. Advised that certification is good for 3 years with recertification required every 3 years. Advised to discontinue practice of keeping cloth towel on shoulder. I provided schedule for certification and recertification classes.
