NOTE: Observed Tiles underneath 3vat sink cracked and tile missing, however CFM has called for repair and will be receiving new tiles upon renovations. Observed walls by hood exhaust vent in back kitchen in need of cleaning/painting, however CFM has Cleaning scheduled for next week.
Please remember to keep areas thoroughly clean and free of any type of food sources to prevent pests.
EHS observed excellent practices of Active Managerial Control by CFM including the following: Server Daily Checklist and Cleaning Guides posted on bulletin board for routine cleaning procedures. CFM keeps temperature logs for all Refrigeration unit temperatures in addition to Sanitation logs. In addition, CFM continues to provide training with all Food Employees and constantly monitors all duties in kitchen. Observed CFM to be very knowledgeable about food safety and proactive towards maintaining a safe and sanitary environment. CFM awarded with an Active Managerial Control award today for the above items. Thank you and keep up the good work!
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the FLOORS in the HARD TO REACH AREAS AT DRY STORAGE AREA, BEHIND ICE MACHINE, UNDERNEATH 3VAT AND BY WATER HEATER is in need of cleaning.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

Observed soda spillage leak from bagged soda pipe in Back Dry Storage area with spillage draining to back wall. Please ensure thorough cleaning to prevent attracting insects.
NOTE: Automatic Quat Sanitizer piping is connected to Hot water pipe. Please remember that when testing solution with test strips, solution must be 65-75F for accurate results.
EHS provided handouts on Employee Health Policy.

NOTE: Prep sink currently not in use as no hot water available only at Prep Sink. Repair scheduled for today.
Tiles by 3Vat Sink of need of repair, however all tiles will be replaced upon upcoming renovations.
Per CFM, upcoming renovations are scheduled for removal of bar area and associated refrigeration units. New display refrigeration will be added along with deconstruction of side wall. Needed lighting fixtures will be added with reconstruction. Plans will be submitted through Plan Review.
CFM is very knowledgeable about food safety, Observed very good practices of Active Managerial Control with Training program for Food Employees in Food Safety. Thank you.

    Observation: Surfaces of ice bins enclosed components are not being cleaned as required.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold.

  • Lighting Intensity/ Walk-ins & Dry Storage/ 10 foot candles
    Observation: Observed that inadequate lighting was provided in the walk-in refrigerators, walk-in freezers, and/or dry storage areas. Lighting is below 10 FC.
    Correction: Increase the lighting to provide a minimum of 10 foot candles at a distance of 30 inches off of the floor in these areas.
  • Lighting Intensity / Consumer Self-Service, Reach-Ins, Other / 20 foot candles
    Observation: Observed that inadequate lighting was provided in the consumer self-service areas, reach-in refrigerators, handwashing areas, warewashing areas, equipment and storage areas, and/or toilet rooms. Lighting in the area behind the bar counter is below 10 FC.
    Correction: Increase the lighting to provide a minimum of 20 foot candles in these areas.
