Kitchen is used for before/after school care, summer camp and church functions.
Bug sprays are not permitted. Only pest control can be done by licensed technican.
Stain wooden cabinet used for storage of plastic silverware with polyurethane coating.

    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.

Operator purchased what she thought to be a detergent-sanitizer, (was misguided by employee at store) was just a detergent.
Temporary set-up will be utilized with a third container next to the two compartment sink until detergent sanitizer can be purchased.
Will call within the week for follow-up

    Observation: Employees are using a 2-compartment sink for warewashing. Information on where to get detergent sanitizer provided to the director.
    Correction: Implement a detergent sanitizer to properly wash/rinse/sanitize dishes. Follow manufacturers specifications.

A three compartment sink must be installed if facility continues to prepare food from a raw state. Recommended switching to pre-cooked foods and implementing detergent sanitizer to wash dishes.

    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Equipment and Utensils - Before Use After Cleaning*
    Observation: Food contact surfaces are not being sanitized after being washed and rinsed.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
  • Plumbing System Maintained in Good Repair
    Observation: Leak observed at the three compartment sink.
    Correction: Repair and maintain all plumbing components and fixtures.
  • Toilet Rooms - Closing Toilet Room Doors
    Observation: Toilet room doors are being kept open. Self-closing devices should be placed on doors and doors should be kept closed.
    Correction: Keep toilet room doors closed except when cleaning or during maintenance operations to prevent insect and rodent entrance and the associated potential for the spread of disease.

Fan at the top of reach-in cooler needs to be cleaned in the near future.
No food preparation observed during todays inspection. Lunch is only served during summer months. Breakfast and snack is served during the school year.
Date mark all ready-to-eat foods within 24 hours. These items must be discarded within seven days if not served.
Do not use sponges to clean food contact surfaces. i.e plates

During the school year breakfast is made for children. Breakfast generally consist of cereal, juice, biscuits, sausage, and bacon.
Employee health policy is in place.
Non-critical violation must be corrected within 30 days.
