| Food preparation will be done either in the commissary or they will use the smoker. All cooling will be done in the commissary as well as most of the dishwashing. Extra utensils are available on the unit but a small 4-compartment sink with limited water supply can be used for utensils if necessary. The small 4 compartment sink in the unit is mobile and can be pulled out of the unit and used as a handwashing sink when the smoker is being used. Small grill is only being used for things such as melting cheese and the food item is covered. Do not use grill if grease and fumes will be produced or you will need to install a hood which is vented to the outside. Issue yearly permit.
