--Staff (Henry) stated most fish products are purchased from True World. Staffs did not have a letter of guarantee for parasite destruction or invoices from True World. Provide the Department with a letter of guarantee that raw "sushi" fish has been properly frozen for parasite destruction. If the product is being frozen at the New Jersey Commissary, you must provide the Department with a detailed HAACP plan in regards to parasite destruction.
- Certified Food Manager (CFM)
--No Chester County Certified Food Manager Working at the Station. You must have at least one Chester County Certified Food Manager working at the facility. Within 20 days a full time staff must be signed up for an ANSI approved Certified Food Manager Coursework. Classing must be complete within 90 days. The individual completing the class must apply for reciprocity upon passing of the coursework. To begin this process, forward a copy of the training certificate to the Department for review. Fax to (610) 344 - 5934. Include on the fax the facility name and mailing address.
