    --Food, such as deli meat and chicken, located at the prep area of the kitchen was not being maintained at or below 41 degrees F. Employees were not working with the food. Put all food requiring refrigeration back into the walk-in when you are finished working with it. The food had been out of refrigeration for less than an hour and was moved into the walk-in cooler.
  • Equipment Openings, Closures & Deflectors (46.582)
    --There is a gap under the door of the walk-in freezer and the threshold at the walk-in freezer door is damaged, creating an ice buildup at the entrance of the freezer. Repair the threshold at the walk-in freezer.
  • Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
    --There is an accumulation of mold and mildew on the splash board inside of the ice machine. Discard the ice and clean and sanitize the inside of the ice machine.
