KDA_4_60111A - --On the utensil rack to the right of the Continental RIF, there were three (5.2 L) plastic food grade containers with tape/residue left on the outside and stacked clean. There was also one (5.2 L) plastic food grade container with dried food debris left on the inside of the container and stored clean. There were five (1.51 L) plastic food grade containers with tape/residue left on the outside and stacked clean. (Can hold bacteria). COS-moved all of the containers to the ware wash area. (Note: 9 containers total, less than 10%).
KDA_4_70211 - --The mechanical dish machine utilizes chlorine for sanitization, there were dishes in the unit and it measured at 0ppm. The drain plug was not in the machine so the machine was not able to be filled properly to get an accurate measurement of chlorine being dispensed. COS-the person in charge placed the drain plug in the unit, filled the machine and ran another cycle, now it is reading 75ppm.
